Energy Balls Recipe

These delectable, ridiculously healthy goodies are just chock full of nutrients particularly beneficial for energy production at the cellular level, as well as for boosting blood flow.

I enjoy having one as a light breakfast prior to my morning workout or after lunch as a treat that keeps me energized throughout the afternoon. Be sure to include a large glass of water with your energy ball for best results. And unless you want to be wide awake, avoid eating them after 2 or 3 pm as they contain caffeine that may disrupt or delay sleep.

I highly recommend grinding the coffee beans first, and then adding the rest of the ingredients to the blender or food processor. It will increase the coffee flavor and make smoother Energy Balls without bean chunks. (Of course if you love eating coffee beans, just blend all the ingredients together.)

Ingredients

1.5 cups oats
1 cup walnuts
I cup fresh or frozen blueberries
1/8 cup each hemp and chia seeds
1 tablespoon cinnamon
1/8 cup cocoa
1/4 cup coffee beans – freshly ground
1/8 cup almond butter( optional)
1 cup prunes
Three tablespoons blackstrap molasses
Oil spray for hands and pan sheet

Directions

Makes about 20 two inch balls.

1) If you prefer, grind the coffee beans before mixing them in with the other ingredients. You can do this in a grinder or blend the beans in the very same blender or food processor (usually a coffee grinder will make smoother grounds).

2) Place all remaining ingredients in your blender or food processor. Blend until thoroughly mixed – about 4 minutes. (The mixture will be smooth with some very small visible bits of oats).

3) Spray your clean palms with pan spray. Spoon about the size of a lime into your palm and roll into a ball with the use of your other palm. Place the ball onto a pan sprayed baking sheet. Repeat until all of mixture has been used. (You may have to clean and respray your palms about half way through if the mixture starts sticking to them excessively.)

4) Place the baking sheet into freezer to allow the balls to get firm. Once firm, place balls into a zippered plastic bag or container of your choice for easy storage in your FREEZER.

The energy balls are ready to eat whenever you are ready to be energized!
