Dr. Ann’s Healthy Homemade Salad Dressing

Quick and Easy Vinaigrette:

1/4 cup extra virgin olive oil

1/4 cup vinegar of choice (apple cider, balsamic, rice, sherry, white wine, red wine, etc.)

1 heaping tsp. dijon mustard 1 tsp. honey

Optional – Herbs or spices (fresh or dried) as desired (garlic, rosemary, basil, chives, curry, cumin, turmeric, dill, cilantro, etc.)

I prefer a one to one ratio of oil to vinegar for a dressing that is a bit lower in calories and thinner, which makes it easier to coat the salad greens and veggies. You can also substitute part or all of the vinegar with fresh lemon or lime juice, but you may need a bit more honey to balance the tart flavor from the citrus juice. It is best to taste and adjust things to suit your palate.
