Apple Balsamic Vinaigrette

Serves 4


  • 1 apple, peeled and cored

  • /3 cup of balsamic vinegar

  • 2/3 cup of canola oil

  • Pinch of rosemary, fresh or dried

  • Pinch of dry mustard


Place all the ingredients in a blender and blend on high speed for one minute. Remove from plender and strain through fine strainer.

Note: You can substitute any firm fruit to serve as the base of this dressing. For example, try experimenting with pears, plums or peaches.
