Asian Cabbage Salad

Serves 4-6

When you are in the mood for a fresh twist on coleslaw, this is a fabulous recipe. And you can turn it into a main dish simply by topping it with seem chicken, shrimp, or tofu.


  • 2 1/2 cups chopped bok choy or Napa cabbage

  • 1/2 cup of shredded carrots

  • 1 seeded cucumber, diced

  • 1 red bell pepper, diced

  • 1/3 purple onion, thinly sliced and chopped

  • 1/2 cup of edamame beans

  • 1/2 cup cilantro, chopped

  • Juice of 2 limes

  • 3 tbs of roasted sesame seed oil

  • 4 tbs of seasoned rice vinegar (or more to taste)

  • 1/3 cup of toasted slivered almonds or peanuts

  • 3 tsp of honey


Toss the first seven ingredients together. Mix sesame oil, vinegar, lime and honey in a cup until well combined. Toss salad with dressing. Top with nuts.

Optional: top with chicken, salmon, or tofu to create an entree salad.
