Black Rice, Mango, and Sprouts Salad

Serves 6

This salad is as delicious as it is stunning to look at.


  • 2 cups cooked black rice

  • 1 mango, peeled and medium diced

  • 3 green onions, sliced (green and white parts…no waste!)

  • 1 cup mung bean sprouts

  • 1/2 cup chopped cilantro

  • 1/3 cup peanuts, chopped

    4 tbsp extra virgin olive oil

    3 tbsp seasoned red wine vinegar


Combine rice, mango, green onions, sprouts, and cilantro. Drizzle with oil and vinegar, season with salt and pepper, and toss to combine. Add peanuts and toss again just before serving

*Feel free to add any chopped fresh veggies such as cucumbers or bell peppers to this. Can’t find black rice? Use brown! But black is best.
