This simple recipe is surprisingly refreshing and WOW delicious. There is something magical about the combination of the parsley, lemon and carrots. And it is so low in calories of course you can eat as much of it as you want!
4 large carrots
1/4 cup chopped fresh parsley (or more if you’d like!)
1 1/2 lemons, juiced
1 tbsp extra virgin olive oil
Cut carrots in half lengthwise. Using a vegetable peeler or a mandolin cut them into ribbon-like shavings. Toss the remaining ingredients and carrot shavings in a bowl. Season to taste with salt and pepper.
