Herbed Wild Rice and Sweet Pea Salad

Serves 6

I love rice salads and this is one of my favorites.


  • 2 1/2 cups cooked wild rice

  • 1 cup frozen green peas, thawed

  • 1/2 cup crumbled feta or goat cheese

  • 1/2 cup chopped fresh parsley

  • 1/4 cup chopped pungent herbs, such as dill, mint, chives, or basil

  • 3 green onions, sliced (green and white parts…no waste!)

  • 1/4 cup extra virgin olive oil
  • 3 tbsp seasoned rice wine vinegar


Combine and gently toss rice, peas, cheese, herbs, and green onions in a large bowl. Drizzle with olive oil and vinegar. Season with salt and fresh cracked pepper and toss. Let sit for at least 20 minutes to let flavors meld.

*Feel free to include any of these as a variation: 1/3 cup chopped toasted almonds, 1/3 cup chopped sun-dried tomatoes, or 1/3 cup chopped roasted red pepper
