Loaded Baked Sweet Potato

Yes, sweet potatoes are delicious loaded too and with this recipe with zero guilt. It is so filling and so good for you!

Ingredients

  • 1 medium to large sweet potato, baked

  • 2 tsp extra virgin olive oil

  • 1 clove garlic, finely chopped

  • A dash or two of cumin and paprika

  • 1/2 cup of canned black beans, rinsed

  • 1/3  yellow onion, chopped

  • 1/2 red, green or yellow bell pepper, chopped

  • 1 tbsp chopped fresh cilantro

  • 1 dollop of plain Greek-style yogurt

Directions

Bake the sweet potato in a 400 degree oven  until cooked through (about 45-50 minutes). In a medium skillet, sauté the garlic, onions, peppers and spices in the olive oil until a bit soft. Add the black beans and stir until the black beans are heated through. Slice the cooked sweet potato length -wise and spoon the black bean/onion/pepper mixture on top. Garnish with the cilantro and the dollop of Greek yogurt.
