Mashed Parsnips

Serves 6


  • 1 ½ tbsp butter or EVOO
  • 1 small onion or ½ a large onion; finely chopped
  • 1 ¾ lb. parsnips; peeled and cut into ½ in chunks
  • 1/3 cup water
  • Salt and pepper


Melt butter in saucepan over medium heat. Add onion and salt to taste. Sauté for 5 minutes. Add parsnips and water, cover with lid and reduce heat to low. Cook covered for 40 minutes, or until parsnips are very tender. Remove from heat and puree in a blender, food processor or immersion blender. Stir in herbs before serving.
