Quick, Delicious Salsa

Serves 6-8

This recipe takes under five minutes to make and is filled with some of my favorite, ultra-healthy ingredients. I use it as a condiment on so many dishes. It's a staple in my fridge!


1 can Rotel (original)

1 can diced tomatoes

2 cloves of garlic

Juice of 1 lime

1 jalapeño pepper (remove seeds to reduce spiciness)

1 shallot

1.5 tbsp. cumin

1 bunch fresh cilantro


Combine all ingredients in a food processor. Store in glass jars in refrigerator and use as often as you’d like!
