Quick Indian Chicken

Serves 6

This meal can be prepared in less than thirty minutes. My family loves it!

Ingredients

  • 1 large yellow onion
  • 3 tbs EVOO
  • 1 rotisserie chicken, pulled from bone
  • 2 cloves garlic, minced
  • 1 (12-oz) jar Tandoori-style Indian cooking sauce
  • ½ cup cilantro, chopped
  • ½ (14-oz) bag baby frozen peas
  • 1 ½ cups whole wheat cous cous prepared as per package directions or quinoa

Directions

In a large sauce pan sauté onion in EVOO until tender.  Add pulled chicken, garlic, and cooking sauce.  Stir and heat over medium/high until just boiling (3-4 minutes).  Add frozen peas and chopped cilantro.  Stir until peas thaw and serve immediately over cous cous.
