Quick Pumpkin Pudding

Serves 1

This smooth and creamy treat can be prepared instantly and is chock full of nutritional goodness. 


  • 1 individual container low-fat Greek-style plain yogurt
  • 2-3 heaping tablespoons of canned 100% pumpkin
  • 2-3 teaspoons of molasses
  • A dash or two of cinnamon


Blend a small container of yogurt with 100% canned pumpkin.  Mix in molasses and top with a dash or two of cinnamon.  For added texture, feel free to throw in a bit of any of the following:  chopped nuts, shredded coconut, dark chocolate chips or some ‘healthy” granola.
