Refreshing Quinoa Salad

Serves 4-6

Having recently returned from a hike to Machu Pichu on the exquisite Inca Trail, I just can’t seem to get enough of the super food quinoa. My daughter Lucie created this simple recipe and I promise that everyone will love it.


  • 1 cup quinoa cooked in chicken broth according to package instructions

  • Juice of 1 lime

  • 1 can of sweet corn

  • 1/3 of a red onion, finely chopped

  • 1 tbsp of extra virgin olive oil

  • ½ bunch of fresh cilantro, chopped


Combine ingredients in a large wooden bowl and stir until well combined.
