3 cups fresh Brussels Sprouts, de-stemmed and rinsed
2 tbs EVOO
Kosher salt to taste
2 tbs fresh mint, chopped
Slice Brussels sprouts in half longitudinally. Layer evenly on a shallow baking dish. Drizzle with a little extra virgin olive oil. Sprinkle with a little Kosher salt. Mix them thoroughly in pan to evenly distribute the oil and salt. Roast in the oven at 325-350 degrees until lightly browned on the outside (about 15-20 minutes). Sprinkle with freshly chopped mint and serve.
