Sauteed Asparagus and Artichokes
Simple, easy and healthy...
- 1 lb. asparagus,trimmed and sliced into thirds
- 1 can artichoke quarters, drained
- I bunch scallions, chopped
- 2 tbsp. EVOO
- 1 lemon, juiced
Heat EVOO over medium-high heat. Add scallions and asparagus cooking until tender. Stir in artichokes and lemon. Season to taste with salt and pepper.
