Sautéed Beet Greens

Serves 2-3

Don't waste the greens on your fresh beets - saute them with this easy recipe!


  • 1 tbsp extra virgin olive oil
  • Tops of a bunch of beets, large stems removed and greens and small stems chopped
  • 1 clove garlic, minced
  • 1 anchovy, optional


Heat the olive oil in a medium skillet over medium-high heat. Add greens, garlic, and anchovy (if using) and sauté stirring occasionally until greens are tender, about 10 minutes. If necessary add a splash of water to help steam and not scorch. Season to taste with salt and pepper.
