Sesame Kale Salad with Avocado

Serves 4-6

Everyone needs to know how to make a good kale salad. The key is really fresh kale and massaging it to soften.


  • 2 large bunches of fresh kale, finely chopped ( about 10 cups)

  • 1 ½ ripe, but firm avocados, large dice

  • 1 tbsp toasted sesame seeds

  • 3 tbsp orange juice

  • Juice of 1 lemon

  • 1 ½ tbsp soy sauce

  • 1 tbsp sesame oil

  • 2 tbsp chopped fresh mint

  • 2 tbsp chopped fresh cilantro


Place the chopped kale into a large salad bowl and add all the remaining ingredients except the avocados. Massage the dressed kale leaves firmly with both of your clean hands until the leaves have softened (about 2-3 minutes). Add the avocados and gently toss to blend.
