Sweet Peas n’ Fresh Herbs Salad with Balsamic Vinaigrette

Serves 4


  • 6 oz. organic lettuce (baby spinach, spring mix, herb blend)
  • 1/2 cup assorted finely chopped herbs (parsley, dill, mint, basil- any combination)
  • 1 cup frozen sweet peas, thawed
  • 2 green onions, green and white parts chopped
  • 1/4 cup toasted walnuts or pine nuts, optional
  • 1/4 cup crumbled feta, optional


Toss lettuce and herbs with desired amount of dressing refer back to salad glossary for balsamic vinaigrette recipe). Divide among four bowls and top with peas and nuts/cheese if using. Serve immediately.

*Add 1/3 cup roasted red pepper slivers for a stunning and delicious variation
