Seeds from 1 pumpkin, rinsed and dried
1 tsp cinnamon
¾ tsp cayenne
2 tsp sugar
¾ tsp salt
1 tbsp EVOO
Pre-heat oven to 375 degrees. Mix pumpkin seeds, cinnamon, cayenne, sugar, salt, and EVOO in a bowl. Scatter mixture onto a baking sheet and bake for about 15 minutes or until light brown and crispy.
