Frittatas are so easy to make and a perfect way to incorporate eggs at dinner. Feel free to substitute or add any other diced veggies or canned beans of choice.
SERVES 6
Preheat over to 375 degrees. In a skillet sauté onions and peppers in the olive oil until soft. In a separate bowl, whisk eggs until thoroughly scrambled. Add eggs to onion/pepper skillet, sprinkle in the rinsed black beans and jalapeño. Place the skillet in the oven and cook for about 15 minutes, or until the center of the frittata is cooked. Top with fresh salsa and a dollop of Greek plain yogurt.
