Delectable Asian Cabbage Salad Recipe

My Asian Cabbage Salad recipe is to die for and healthy to boot! Makes for a great nutritious lunch or dinner!

Ingredients:

2 1/2 cups chopped bok choy or napa cabbage

1/2 cup of shredded carrots

1 seeded cucumber, diced

1 red bell pepper, diced

1/3 purple onion, thinly sliced and chopped

1/2 cup of edamame beans

1/2 cup cilantro, chopped

Juice of 2 limes

3 tbs of roasted sesame seed oil

4 tbs of seasoned rice vinegar (or more to taste)

1/3 cup of toasted slivered almonds or peanuts

3 tsp of honey

Instructions:

Toss the first seven ingredients together. Mix sesame oil, vinegar, lime and honey in a cup until well combined. Toss salad with dressing. Top with nuts.

Optional: top with chicken, salmon, or tofu to create an entree salad.

Serves 4-6
