Make Your Salads Even Healthier

food-eggs

This is a great health tip that will get you even more nutritional oomph from your salad veggies. All you have to do is throw in some eggs. Researchers from Purdue University found that when whole eggs (yolks required!) were added to a salad of mixed veggies, the absorption of vitamin E increased up to 4 to 7-fold.

This is fantastic to know because vitamin E is the second most under-consumed nutrient in the American diet. This same group of researchers had shown in previous studies that adding eggs to salads dramatically boosted the uptake of carotenoids, a key group of life-giving compounds that include lycopene, lutein, and beta-carotene among others.

This is a perfect example of the reality of food synergy – how one food can enhance the health value of another when eaten together. Click here to see some additional examples of “dynamic duos” you should be taking advantage of!
