This delicious “healthy” starch comes naturally loaded with vitamin C, B vitamins, and potassium, but is most prized for its off-the-charts beta-carotene content. One medium sweet potato provides over 200% of our daily requirement for this key nutrient! Because of their fiber-rich make-up, they will not spike your blood glucose level like white potatoes, which is better for metabolism and for those concerned with diabetes. Here are two of my favorite ways to enjoy sweet potatoes: thyme mashed sweet potatoes and loaded baked sweet potatoes.
