Apples are a true wonder food. Research has shown that this delicious fruit can lower cholesterol, improve blood sugar regulation, reduce cancer risk, reduce asthma risk, aid in weight control, protect vision, and improve gastrointestinal health.
I find this recipe divine!
Heat 1 tbsp EVOO in a large skillet over medium heat. Add onion, celery, and apple and saute until softened and onions are golden. Mean while slit chicken breast (if using) in half. Place each cutlet or halved breast under a Ziploc bag and flatten with a rolling pin or mallet. Transfer onion mixture to a bowl and add cheese, raisins, and rosemary. Season with salt and pepper. Equally divide the mixture in the center of each breast and roll up. Place 2 tooth picks through either side of the chicken rolls to secure them together. In same skillet heat 1 Tbs. EVOO on medium- high. Place chicken breast in skillet seam side down first. Cook until golden brown about 3 minutes, flip chicken and cover. Cook until golden brown. Remove toothpicks before serving.
