A Plant-Based Recipe Everyone at Thanksgiving Will Love

This savory vegetable is a striking exception to the “white foods are bad for you” rule.  Like its cruciferous cousins, broccoli, cabbage, and kale, cauliflower is a nutrition and cancer-fighting powerhouse.  Cauliflower provides a hefty dose of fiber, vitamin C, and folate, but is most prized for its anti-cancer chemicals called glucosinolates and thiocyanates.

Here is a really delicious recipe for cauliflower fritters courtesy of my little chef (daughter), Lucie.

Cauliflower Fritters

Serves 4-6

I promise that everyone, even kids, will love this cauliflower dish.

Ingredients

  • 1 large head of cauliflower, steamed
  • 2 eggs
  • ¼ cup feta
  • 2 tsp. Garam masala or curry powder
  • 1/3 cup whole wheat bread crumbs
  • salt and pepper to taste
  • ¼ cup high heat canola oil

Directions

Mash cauliflower. Add the next four ingredients; season to taste with salt and pepper and mix to combine. Form cauliflower mixture into patties. Heat canola oil in large skillet over high heat. Fry patties until brown, flip and brown the other side. Place on paper towel or newspaper to drain before serving.
