A Superstar Food for Spring

Spring has sprung and so have asparagus. Tender, green and so delicious, asparagus is a delicacy that you can enjoy with the promise of improved vitality.  Like other green vegetables, asparagus is overflowing with nutrients-providing twenty-two vitamins and minerals and an equally impressive list of anti-inflammatory and antioxidant phytochemicals. And of course, all of this for hardly any calories.

Sauteed Asparagus and Artichokes

Serves 4-6Simple, easy and healthy…

Ingredients

  • 1 lb. asparagus,trimmed and sliced into thirds
  • 1 can artichoke quarters, drained
  • I bunch scallions, chopped
  • 2 tbsp. EVOO
  • 1 lemon, juiced

Directions

Heat EVOO over medium-high heat. Add scallions and asparagus cooking until tender. Stir in artichokes and lemon. Season to taste with salt and pepper.

Asparagus with Lemon-yogurt Dressing

Serves 4-6This is one of the easiest ways to make perfect asparagus that everyone will love.

Ingredients

  • 1 ½ lb. asparagus, trimmed

  • 1/3 cup yogurt

  • 1 lemon, juiced

  • 1 tbsp. chopped dill

  • 1 tsp. honey

  • salt and pepper

Directions

Steam asparagus until just tender. Rinse in cold water and chill in the fridge. Stir together honey, yogurt, dill, and lemon. Place asparagus on a platter; drizzle dressing over and season to taste with salt and pepper
