My Family’s Favorite Cabbage Recipe

Cabbage is one of the healthiest vegetables nature has given us. It is super low in calories and filled with cancer-fighting agents called isothiocyanates. Purple cabbage has the added benefit of anthocyanin pigments that quiet inflammation too.

Here is one of my favorite recipes for this amazing veggie:

Black Skillet Red Cabbage

Serves 6

This is my favorite way to cook cabbage. Quick, easy and always popular with my kids.

Ingredients

  • 4 cups thinly sliced or chopped red cabbage

  • 1/2 purple onion thinly sliced

  • 3 garlic cloves minced

  • 2 tbs extra virgin olive oil

  • 1 tbs sherry vinegar (or to taste)

  • Kosher salt and pepper to taste

Directions

In a large skillet, cook the garlic and onion in the olive oil until soft.  Add cabbage and sauté on medium high heat, stirring constantly until just softened (about 6 minutes).  Combine with sherry vinegar and salt and pepper to taste.  Top with a dollop of plain Greek-style yogurt.
