Dr. Ann’s Favorite No Lettuce Salad Recipe

Not all salads require lettuce. Here is a great recipe for one of my favorite No-Lettuce Salads:

red bell pepper recipe

Ingredients

Serves 4 to 6


-1 red bell pepper, chopped
-1 yellow bell pepper, chopped
-1 seeded, peeled cucumber, chopped
-10 baby carrots, diced
-1 avocado, diced
-½ to ¾ cup crumbled feta cheese
-EVOO (Extra virgin olive oil)
-Seasoned rice wine vinegar

Instructions:
Combine salad ingredients in a bowl.  Drizzle with EVOO and vinegar to taste and gently toss.
