One of my favorites is:
1/4 cup fresh lime juice
1/4 cup extra virgin olive oil
2 tbsp honey
2 and 1/2 tbsp finely chopped fresh cilantro
1 garlic clove, peeled and minced
tsp chopped jalapeño pepper
Combine all ingredients in a cup. Whisk together to emulsify and taste for seasoning. Adjust if too limey or oily by adding more of either or increasing honey. Can be stored in fridge for up to 3 days.
